Indian Food Made Easy Review

Indian Food Made Easy

I live in Mumbai now and have been watching Anjum's program on Discovery Travel and Living. Watching her make the recipes looked so easy, and since I am already in India, I figured finding the ingredients would be no sweat (it wasn't).
Anjum also lightens up the recipes (i.e. Potato and Pea Samosas made in Filo pastry dough and then baked) and the desserts at the end look divine--especially the kilfi (Indian style ice-cream). Anjum Anand is in London, so all the ingredients can be found in the west if you only take the time to look for them.
So far, I've made the Himalayan Lamb and Yoghurt Curry (page 50)and today made the North Indian Lamb Curry (page 54). Both times I used mutton on the bone as lamb is hard to come by in India!
Both were outstanding curries, but the North Indian recipe (from Punjab) turned out so well, I was compelled to write a review of the book. The paneer recipe is so simple that once I get myself a cheese cloth, I'll be making my own cheese from now on. Milk + lemon juice or yoghurt? How easy is that?
This is an outstanding book and the recipes are laid out in a simple, novice friendly way. There are gorgeous pictures of almost every recipe and there are a few glossaries to help those unfamiliar with Indian spices or terminology. I highly suggest making your garlic/ginger paste from scratch and not try to find any store bought. It makes all the difference!

Julie Sanhi's Introduction to Indian Cooking Review

Julie Sanhi's Introduction to Indian Cooking
Average Reviews:

(More customer reviews)
It is not an understatement for me to say that Julie Sahni and her cookbooks are the reason my friends think I'm actually a chef extraordinaire, when all I really am is a person who can find and follow recipes, perhaps somewhat too slavishly.
I wish I had had Julie's "Introduction to Indian Cooking" earlier in my culinary progression. I might have avoided some of the burnt offerings I provided willing friends (okay, guinea pigs, but they weren't complaining as they're usually hungry).
I really came to this cookbook because I decided that I needed to expand my repertoire, so that I could satisfy the gamut of tastes and predilections of the "fish" vegetarians, the omnivores, the strict vegans and the hosts of others that I hang out with and have over to my house on various occasions.
I have done that and more through such things as making my own mixing, toasting and grinding my own curry powder from scratch. (Compare the aroma of that with some of that store bought ground stuff that's probably gone stale and I suspect you'll never go back.)
The consensus favorite among the fish vegetarians and omnivores so far is Julie's recipe for Malabar Coconut Shrimp, also known as Konjupa. As I'm fond of saying, "it's out of this world."
For more standard dinners with your family, you could try the chicken curry, or murgh masala masala recipe. Let me know if it doesn't easily surpass any such entree you may find at your local Indian restaurant.
My home on cooking weekends is now known as "Hindu haven." The small god that I pray to-- that things will work out as I'm scrambling before a party--is this book.
Bon appetit as you travel East on your culinary adventures.

Lorna Sass' Short-Cut Vegetarian: Great Taste in No Time Review

Lorna Sass' Short-Cut Vegetarian: Great Taste in No Time
Average Reviews:

(More customer reviews)
Every cookbook I own has a focus. Some are ethnic cookbooks. Some are gourmet cookbooks. Some are comprehensive references.
This cookbook's focus is speed. Every recipe lists the "prep time" and "cook time", and for almost all recipes those times are each between 5 and 15 minutes.
Each recipe consists of a short list of ingredients, and the preparation directions are clear and super-concise. Occasionally, one ingredient in a recipe will be a product of another recipe, which is usually a pet peeve of mine in cookbooks, but such ingredients are rare and always have store-bought equivalents if you don't want to prepare them yourself.
Many of the recipes can also be converted from leftovers into a different form -- the quinoa / potato / corn / pepper pilaf easily becomes a stew with a couple cups of water and some veggie stock powder. This is especially handy if you primarily cook just for yourself (as I do.)
I only have two complaints about the book, and they're not major. The first is the lack of all photography, although it sure makes the cookbook unbelievably inexpensive, so it's a fair trade.
My second (minor) complaint is that either I'm a slow cook, or her prep times assume that the ingredients are already as specified -- a recipe will call for chopped carrots, diced pepper, diced tofu, etc. and I think the prep time assumes you already have it all diced and chopped. Either that, or it's simply that I'm chopping everything by hand rather than with a food processor. Either way, the recipes generally seem to take me roughly 150% to 200% of the time she allots. Since I'm not a professional chef (to say the least) I can totally accept that this is just me being slow.
If you're like me, you browse Amazon and add most things to your wish list, only buying fairly sparsely of the items that are really compelling. If so, buy this book. It's inexpensive, and it's fantastic. In just the past week I've owned it, it has dramatically changed the quality and diversity of what I eat at home.

Of the many vegetarian recipes books I own, this is the one I return to the most. The recipes are delicious, turn out well consistently and have ingredients that I would normally have on hand. The nutritional information is listed with every recipe, which makes it easy to see at a glance, and the opening chapters are very informative about healthy eating. The recipes include enough spices to give them wonderful flavour without being too hot. A practical and inspiring book.

These recipes are served in the World Food Cafe, which the Caldicotts operate in London. For those of us not lucky enough to visit their restaurant, here are some tasty entrees to whip up at home: Caribbean Vegetables in Mustard Coconut and Rum Sauce (from Costa Rica), Saag Paneer (from India), Sweet Apple Salad (from the Seychelles), Cardamom Mashed Sweet Potatoes with Pepper Relish (from Tanzania) and many more. Confessions of an East Coast Raw Vegan Review

Confessions of an East Coast Raw Vegan
Average Reviews:

(More customer reviews)
The book's honest and entertaining introduction offers inspiration and insight to anyone who seeks to improve their relationship with food. After reading it and trying many of the delicious dishes, I have significantly cut down on eating meat and overall become a healthier eater.
Even a novice dehydrator (like myself) can make AMAZING food with the recipes - they are that clear and precise. I especially love the flatbreads. As someone who tries to cut down on gluten intake, these have offered a much-needed (and better tasting) alternative to baked bread. The salads and desserts are also a hit, impressing even the most finicky eater whenever I take one to a potluck.
In sum this is absolutely brilliant. The author truly is an artist, with the palette being her canvas.

LA Porte Des Indes Cookbook Review

Imagine a twist on traditional Indian faire, namely one with a resounding French influence. I was so taken by the outstanding cuisine of this London restaurant that describes itself as "Indian Cuisine with a Difference" I pined for their cookbook. My five year wait is over. Is it ever impressive!
I had never dreamed that I could create credible tandoori grilled salmon or prawns on my own outdoor grill at home by following the recipes described in the cookbook. The grilled prawns are such an absolute knock out that unsuspecting dinner guests who instinctively must reach for cocktail sauce find themselves instead reaching for yet another grilled prawn! The green fish curry made with monkfish, with its novel presentation, was another succulent dish expertly nailed.
Tadka Dal (tempered yellow lentils) and Yellow Lentil Soup are other dishes prepared that our guests readily savor. They also made delightful autumn themed additions to our table, what with the blend of yellows, reds and greens.
Mehermosh and Sherin Mody have compiled an exquisite work that is easy to follow and even includes recipes for a number of delectable chutneys and sauces that greatly complement certain foods. Many superb photographs visually accompany dozens of recipes. They sent me scurrying to my local Indian spice shop to round out my spice cabinet. And, I now keep on hand lots of fresh garlic!
Whether one's experience level with Indian cuisine is novice or sophisticated, one will find the cookbook easy to follow and informing. For me, it was well worth the wait. For my friends who cook, well, let's just say they have tasted their way into ordering their own copy of the La Porte des Indes Cookbook!

Part of the Blue Elephant Group, the acclaimed La Porte des Indes restaurants in London and Brussels offer a unique style of Indian cookery inspired by the French creole cuisine of Pondichery and other former French trading posts in Southern India. Dishes such as Demoiselles de Pondichery (scallops in a saffron sauce), Magret de Canard Pulivar (roasted duck breasts in a banana leaf parcel) and Riz au Lait de Rose (crushed basmati rice and clotted cream milk pudding) blend French and Indian ingredients and flavours in a delicious way. The historical theme is continued in the design of the restaurants, where elegant palms, moghul waterfalls and antique carvings and paintings evoke the atmosphere of French-colonial India. La Porte des Indes Cookbook presents the very best recipes from the restaurants, including many of these original 'fusion' dishes as well as other regional specialities from across the subcontinent. Introductory chapters cover the ingredients and equipment used in Indian cooking, as well as Indian teas and suitable wines to drink. These are followed by over 80 recipes for hors d'oeuvres, soups, fish and seafood, meat and poultry, seafood, vegetables, rice and bread,

I am so grateful to finally have a recipe book that I can depend on for entertaining guests (vegan or not). I have not been disappointed in any of the meals I've tried, and in fact, some of the recipes are staples (trust me, you will become addicted to the tofu from the "Grilled Tofu Provencale" on page 106! My fiance and I have a supply of that in our fridge at most times during the grilling season).
My only complaint is that some of the ingredients are hard to find if you live in a small town; however, all the recipes are fairly simple and even easy once you get your hands on what you need, and in the end, the result is unbelievable.
If the authors happen to read this review, I would like to beg you to share your recipe for the Bistro Steak you serve in your restaurant. That meal is the best meal I have ever eaten in 32 years of eating!!

I already owned the book and wanted it for a gift - I'm interested in the history of the area as well as the food, and it met expectations. The recipes I've tried, using the processes they recommend, are wonderful. If you like exotic foods, and want to know how they came about, you'll love this book. There's a paperback, but I think it's a sequel, not the same book.

Combining travelogue and recipes, this book tells the story of how Chris and Carolyn Caldicott followed the trails of the early spice merchants on their search for authentic spice recipes. As they travel through the Eastern Mediterranean, the Indian subcontinent, Asia, Africa and the Americas, they explain how indigenous spices were traded and how foreign spices arrived, and they explore the effect the spices have had on the local cuisines, supplying the recipes for the dishes they discovered along the way. Among their adventures are an encounter with an unscrupulous saffron-dealer in the souk in Aswan, an elephant hike through the jungles of south west Nepal, enrolment at the Thai Cooking School at the Oriental Hotel in Bangkok, and a trek across the Andes to Machu Picchu, the lost city of the Incas.--This text refers to an out of print or unavailable edition of this title.

Cafe Chimes Cookbook Review

Cafe Chimes Cookbook
Average Reviews:

Bear with me, I have never written a review for anything & am not sure this is what I should be doing!
Years ago, I taught skiing in the White Mts. of NH. My mentor was a wiry, elderly lady who could work/ski circles around all of us. She kept after me to learn to "eat right" & to show what she meant, I (a professed carnivore with a 'healthy' disdain of vegetarian/vegan lifestyles) was dragged, protesting all the way, to Cafe Chimes. Once there, the tastes, aromas, textures & visual presentations were all too seductive.
Long story short...I fell in love with the place! Kathy was usually up front cooking & the aromas still linger in my soul. As she appeared in the pix in the book, so she appeared in real life. She was as welcoming and warm as her food.
The Chimes Cookbook that I am ordering today will be the 8th that I have bought. With the exception of my original copy, obtained in NH, all have been given as gifts to people (vegetarian, or not) who truly love good food.
The recipes are true to the originals and the food she presented was not only food to fuel the body, it fueled the soul. Casseroles, pilaf, soups...OMG, her soups! The bubbling hot squash soup in the cold of winter.........
Now, 15 years later, with Cafe Chimes & Kathy, & my mentor only memories, the food remains to nourish the bodies, hearts & souls of another generation. Any of her foods are great alone, & for us carnivores of the world, make a great accompaniment to, or substitution for, our meats! ( Sorry Kathy, you never could talk me out of my meat!)
This is one cookbook that is truly from the heart....not created as a 'money-maker for yet another highly paid chef....but created to perpetuate the warmth and fantastic food of a truly unique lady who chose to make the lives of the people in a northern NH town better, by the fact that for a space & time, there was a Cafe Chimes.

New Vegetarian Review

New Vegetarian
Average Reviews:

(More customer reviews)
New Vegetarian is the real deal, a book of 75 global recipes, some of them vegan, that are delicious and inviting. If your motto is "Try something new every day," this book will keep you sated and happy. Practically speaking, I would classify this as a special-occasion vegetarian cookbook for a couple of reasons:
a) many ingredients (mock abalone, goji berries, kamut, coconut cream) require an extra stop to an ethnic or health food store...or, at the very least, some advance planning if ordering via the internet.
b) many, but not all, recipes are more time or labor intensive than most people can manage Monday through Friday
Still, this book has its place on my bookshelf because the recipes are delicious and the food presents well. It's what I'd reach for when I'm tired of the same 30 or so ingredients I tend to use over and over. It's also perfect for impressing guests. The book is divided into the following sections:
1. Appetizers/small plates - full of beautifully presented dishes that will impress any guest.
2. Salads - one of my favorite sections of the book, because the combinations of fruit, vegetables, nuts and cheeses are unique and mouth-watering
3. Soups - another favorite section, because she understands the importance of good soup making...which always starts with a good homemade broth.
4. Main Courses - I was less impressed with the main courses here, if only because there is a slight emphasis on "mock" meat dishes, a pet peeve of mine, since vegetarian eating shouldn't be construed as a way of pretending to eat meat. Many would argue otherwise and I see their point. I just enjoy honoring wholesome ingredients as they are.
5. Desserts - all vegan, a great idea, since there is an overabundance of great desserts that call for butter and eggs. good section with an offering of both traditional American goodies and some international sweets that may be less familiar to readers.
Some observations on the book overall...the food photography does its job, bringing the author's recipes to life with mouth-watering images. The food styling is excellent.
Valuable information in the introduction about how vegetarians get their nutrients. Also helpful is a resource guide for some of the harder-to-find ingredients.
As briefly mentioned above, this book contains both vegan and vegetarian recipes. Many of the vegetarian recipes could be amended to accommodate vegan diets with simple omissions.
One gripe I have with this book (and some other Chronicle Books publications I own) is this: while I appreciate the clean negative space on the recipe pages, my eyes do NOT enjoy reading such a small typeface, especially when many critical measurements have fractions in them, at what I estimate to be about 4 pt. type. Much, much too small.
Recommended.

The Millennium Cookbook: Extraordinary Vegetarian Cuisine Review

The Millennium Cookbook: Extraordinary Vegetarian Cuisine
Average Reviews:

(More customer reviews)
Overall, this is one of the best cookbooks I own, and I make that claim as a former meat-eater and a recent most-of-the-time vegan. I have been using "The Millennium Cookbook" since February and have made roughly half of the recipes in the book, including nearly all of those for pasta and pizza. I use this book all the time. My husband--a sometimes meat-eater with an open mind and palate--says nearly always that our Millennium meals are "exquisite." I certainly concur. Here are some stand-outs, in our view:
Appetizers: Roasted Tomato and White Bean Galettes; Plantain Torte; Grilled Portobellos with Herb-Tofu Aioli and Red Onion Marmalade
Salads: Oil-Free Caesar Dressing; Millennium Warm Spinach Salad; Curried Almond Dressing; Ruby Grapefruit, Avocado, and Pickled Red Onions with Baby Spinach and Grapefruit Mojo Dressing; Moroccan Eggplant Salad
Soups: Yellow Split Pea Soup with Sage and Smoked Dulse Gremolata; Brazilian Black Bean Soup with Coffee and Orange
Pasta and Pizza: Pasta with White Wine-Marinated Tomatoes and Basil; Mushroom, Fennel, and Dill Cream Penne; Marinated Fig, Onion, and Black Olive Pizzas with Herb-Tofu Aioli; Caramelized Garlic and Smoked Portobello Pizzas; Tempeh Pizzas with Puttanesca Sauce
Sides: Millennium Fat-Free Mashed Potatoes
Entrees: Baked Madras-Glazed Tofu with Saffron Basmati Pilaf, Sauteed Vegetables, and Peach-Lime Chutney; Rosa Bianca Eggplant Torte with Smoked Onion Ratatouille and Flageolet-Sage Sauce; Seitan Piccata; Grilled Jerked Seitan with Coconut Mashed Yams; Spring Onion, Morel, Fresh Pea, and Lemon Thyme Risotto
Brunch: Smoked Tempeh and Potato Sausages; Flaxseed-Apple-Battered French Toast with Warm Apple Compote; Millennium Oat and Walnut Pancakes with Blueberry-Orange Sauce
Desserts: Mocha Mud Slide; Mad Good Chocolate Cake; Pine Nut and Anise Cake; Brownies a la Mode; Chocolate-Almond Midnight; Meyer Lemon Bundt Cakes with Blackberry Sorbet and Meyer Lemon Sauce; Fig and Almond Tart with Red Wine and Pear Cream
The desserts are "to die for," especially the fat-free version of their brownies. Overall, the meals are delicious, filling, and very satisfying. We don't hesitate to accompany them with a good bottle of wine.
Another plus is that with time, you get a feel for using fat substitutes (e.g., braised garlic, stewed prunes, and the amazing silken tofu) and can soon come up with your own novel creations.
Readers should be aware that this book does have its drawbacks. While many of the recipes can be made easily and quickly (pasta and pizza, mostly), many others require considerable time and effort. Close inspection reveals that there are a certain number of errors (sometimes of omission, e.g., saffron-cream sauce that leaves out the saffron ..., or even lack of directions). It should be noted that these can be attributed ultimately to the editors and not to the authors. I'm sure the second edition will clear these up. I've also found that many of the recipes work better with a little less liquid than called for (I don't know if this is a question of personal preference, altitude, or something else). For the above reasons, the "Millennium" is not for beginning cooks, in my view. But if you know how to cook, want to be a vegan, and are tired of searching "Gourmet" for the odd recipe that doesn't contain animal ingredients, this book is for you as much as it is for me--an inveterate "food snob" of the first order.
Given rising rates of population and chronic disease, along with diminishing resources, vegan cooking is inevitably the culinary wave of the future. Compared to the other vegan cookbooks out there (even "The Vegan Gourmet"), the "Millennium" is the best. It's certainly worthwhile to join its celebration of great plant-based food. This is the best investment I've made in a cookbook in many years.

Vive le Vegan: Simple, Delectable Recipes for the Everyday Vegan Family Review

Vive le Vegan: Simple, Delectable Recipes for the Everyday Vegan Family
Average Reviews:

(More customer reviews)
...it is an informative book on healthy living. Besides numerous nutritious recipes for breakfast and brunch, baked goods, sauces, spreads, soups, main courses and other things, Burton provides advice for "Feeding Your Vegan Baby & Toddler" which is divided into age groups for 6-9 months, 9-12 months, 12-18 months, 18-24 months and 2+ years. In the section "Additional Notes for Feeding Baby" Burton discusses organic foods, prepackaged foods vs. home-made and food preparation tips.
Another helpful section that offers practical information is "Cooking Guides & Notes" where the author provides guides to cooking grains and beans and other "Cooking Notes." A comprehensive glossary is also useful.
Burton's support of hemp foods is a welcome addition to this recipe book and will hopefully encourage other cookbook authors to feature this nutritious food in their books. Not only does Burton include a section on "Hemp Foods," but she also mentions the importance of hemp in the Introduction.
"This is one of the few cookbooks you will see that features hemp products. Hemp seed nuts and nut butter provide complete protein and essential fatty acids that we can only get from our diet. Hemp seed oil is also rich in the essential fatty acids." (page 14)
Another interesting aspect of Burton's book involves the relatively small number of recipes that contain soy. Burton's reason for minimizing her use of soy is simple. "I suspect that many vegetarians and vegans rely a little too heavily on soy, and while I still include it in my family's diet, no one food should be consumed excessively." (page 14) Burton also includes numerous wheat-free recipes and recipes which feature a wheat-free option.
It's nice to see that vegan recipe books are becoming more popular. Vive le Vegan! is one of the better vegan cookbooks that I've seen as it not only offers a good selection of easy-to-make, nutritious meals and snacks, but it contains lots of other important information as well. Those who turned to vegetarianism due to a love of and respect for animals will want to get a copy of Burton's book and consider taking the next step to veganism. As Eric Marcus points out in the Foreword:
"Many people assume that concerns over cruelty can be addressed by becoming a lacto-ovo vegetarian, and buying free-range eggs and organic milk. Unfortunately, welfare standards for these foods are utterly lacking. And, just as troubling, these foods depend on slaughter every bit as much as their factory farmed counterparts. There is simply no such thing as animal agriculture without suffering and killing - the economics just don't allow it."
Vive le Vegan! will be of interest to everyone looking for interesting, nutritious, cruelty-free recipes.--N. Glenn Perrett

A steaming bowl of garlicky lentil soup, a vegetable-filled lasagne, a perfectly balanced vegetable curry, and baked macaroni and smoked cheese with a crispy bread crumb crust are just a few examples of dishes I always want as part of my repertoire, no matter what the current food trend. These tried and true classics, along with some delightful variations on these favorite dishes, make up this essential book. I provide "tips" after each recipe to ensure you'll have success with each dish, and there is a comprehensice Glossary of Ingredients to answer any of your shopping questions. VEGETARIAN CLASSICS is the ideal cookbook for the novice who is learning about the world of meatless cooking, as well as the sophisticated cook who expects full-flavored, fresh food made with the best ingredients. Whether you're a vegetarian, semi-vegetarian, or dedicated meat eater who likes to eat meatless meals a few times a week, this book will provide you with the best of vegetarian cooking, the beloved classics.
