Guy Food: Rachael Ray's Top 30 30-Minute Meals Review

Guy Food: Rachael Ray's Top 30 30-Minute Meals
Average Reviews:

(More customer reviews)
This title and three others like it by Rachael Ray in the 'Top 30 30 minute meals' series are, for the content, relatively expensive and inconveniently sized volumes of recipes reprinted from Rachael's previous books. Looking through two of the titles I recognize every recipe I see from earlier books. While Rachael is the nominal author of these books, I fully believe they were assembled by her publisher and a copy editor with maybe a day's input from Miss Rachael for all four books together.
This is becoming a common practice among major cookbook authors, with Mark Bittman's re-releasing his 'How to Cook Everything' in three volumes, cumulatively more expensive than the original book.
One may for a moment equate these books with the music world's 'Best of' releases, but the experience is simply not the same. A 'Best of' album's tracks are based on a genuine audience vote with their purchases and air play. These recipes are simply Rachael's opinion and that of a few of her colleagues. The parallel also breaks down in the sense that listening to, for example, 'The Who's top twelve hits introduces you to a whole new experience of listening to 'My Generation', 'I'm Free', and 'I Can See for Miles' on the same album.
My 3 star rating is not based on the quality of the recipes. It is a warning that these volumes are, in fact, reprints and not new recipes. So, if you already own many or most of Rachael's books already, you may be disappointed if you buy these books.
One other consideration if you do NOT own any of Rachael's books is that for not too much more money, you can get 10 times as many recipes in her 'No Repeats' book of almost all new recipes.
In every way, this is a better purchase than one or all of these minibook samplers.

The Reluctant Vegetarian Cookbook: An Easy Introduction to Cooking Without Meat, Eggs, and Other Once-Favorite Foods and Discovering What Tastes Even Better Review

Sharalyn Pliler's 'Reluctant Vegetarian Cookbook' is unique because she provides over 50 pages of very readable, useful information on why and how to be a vegetarian. No lecture - just interesting, practical information. I especially appreciate the references to whether a food provides an acid/alkaline balance. The Table of Contents leads me easily to protein recipes, grains, or a soup de jour recipe. Plus, breakfast ideas are abundant (and delicious). The section on Herbs & Spices has given my cooking a much-needed improvement. This will be a favorite gift to share with others.

Who in their right minds would ever want to be a vegetarian? Sharalyn Pliler asked just months before she-accidentally-became one. A few days into a camping trip in the woods, she was amazed to experience that instead of getting weaker without meat, just the opposite happened-she felt more energetic, lighter and more clear-headed, needing to eat less than before while enjoying food even more, as if her taste buds had come alive. Reluctant to become a vegetarian but unable to argue with definitive direct experience, she had no choice but to begin the transition from familiar meat cookery to the unknown world of vegetarianism. Not many cookbooks are page-turners but with her light-hearted style, down-home sense of humor and master's level writing skills, readers are carried effortlessly as she tells her story of awakening to the pleasures and techniques of vegetarianism. Once a cook in a vegetarian university kitchen, now with three decades of vegetarian experience, she seems to anticipate every question.

The 15-Minute Gourmet: Vegetarian Review

The 15-Minute Gourmet: Vegetarian

I have a VAST collection of vegetarian cookbooks. Recent changes in my lifestyle and schedule mandated that I learn to cook faster meals, so I ordered several books promising fast meals. This one delivers. While some of the recipes take a bit longer than 15 mintues, few take more than 30, and much of that time is cooking time, not preparation. Most of the ingredients are common, and a few, such as tahini and miso are less common, but not rare.15 Minute Gourmet: Vegetarian is divided into food groups such as soups, sauces, entrees, desserts, and appetizers. She includes some "basics" on nutrition and good health, as well as suggestions for balancing a healthy vegetarian diet. There are several complete menu suggetions and many recipes include a suggestion for a recipe that would make a good companion. There are even good ideas for setting up an organized kitchen to save MORE time. These are not Standard Amercian Diet foods made faster. These are very nutritious recipes with some ethnic diversity. Quite impressive for a collection that all can be assembled in moments, and many are even low in fat. For those who are curious, some recipes include...quick tomato sauces, pesto, orange-tahini sauce, cheesy vegetable spread, peanut dip, asian stew, quick pea soup, moroccan chickpea soup, fresh croutons, strawberry and blueberry soups, peach vinaigrette (and many others), thai cucumber salad, pasta with herbed ricotta and pine nuts, sweet and sour tofu, vegetable curry, nut burgers, vanilla poached pears, and chocolate dipped pineapple with raspberry sauce. In addition to all of these wonderful features, the layout is simple to read, directions are numbered and divided by steps (less confusing) and there are quite a number of full-page color photographs of the recipes.I highly recommend this book to those who are afraid that "quick" vegetarian food also has to mean "bland".Paulette, I commend you.

Pressure Perfect: Two Hour Taste in Twenty Minutes Using Your Pressure Cooker Review

Pressure Perfect: Two Hour Taste in Twenty Minutes Using Your Pressure Cooker
Average Reviews:

(More customer reviews)
Having purchased and thoroughly enjoyed Cooking Under Pressure and The Pressured Cook, it was a no-brainer to purchase Lorna Sass's latest offering for the pressure cooker. For persons new to pressure cooking and even for us 'old hands', this may be her best work yet.
The first twenty-two pages are a primer for pressure cooking. Ms. Sass demystifies this cooking genre and guides the reader through what she calls, 'The Language of Pressure Cooking'. She reassures the novice of the safety of today's pressure cookers and generally provides all the information that the reader will need to be successful.
What I really liked about this book (besides the recipes) are the 'extras': Variations, Transformations and Pressure Points. The variations suggest alternate ingredients, the transformations explain how to modify the recipe to create other dishes and the pressure points provide information, techniques and suggestions specific to different sized cookers. This is particularly useful as electric pressure cookers are now becoming popular and recipes don't always work the same as for stovetop models.
But, you buy a cookbook in order to make great food! Pressure Perfect won't disappoint. I admit to being a poultry lover and the pressure cooker can turn out mixed results. The Chicken Cacciatore recipe was my first choice and it was a keeper! Subsequent recipes, all highly recommended were Spanish Rice with Chicken and Sausage, Beef, Mushroom and Barley Soup and Chicken Noodle 'Casserole' with Mushroom Sauce. I'm still experimenting and at least for now, every recipe has been outstanding.
If your pressure cooker has been in storage, drag it out and dust it off. Buy this book, read through the first two chapters and get ready for a wonderful culinary experience. You will be very pleased with your results...I know that I am!

International Pantry Cookbook: An Everyday Guide to Cooking with Seasonings, Prepared Sauces, and Spices Review

International Pantry Cookbook: An Everyday Guide to Cooking with Seasonings, Prepared Sauces, and Spices

I made the tastiest & moistest chicken ever with help from this cookbook. I bought this book to help me learn how to cook with my new inverted roaster and cooking bag to retain juices. I can cook a chicken or turkey with herbs in place of salt for my heart conscious father. There is reference to cooking with this kind of roaster. But I wish there were more recipes to teach me more recipes for an inverted roaster.

Mark Bittman's Quick and Easy Recipes from the New York Times: Featuring 350 recipes from the author of HOW TO COOK EVERYTHING and THE BEST RECIPES IN THE WORLD

I received Mark Bittman's Quick and Easy Recipes for Christmas. I am an avid cook, but find that lately I don't have the time or energy to cook a full meal when I get home from work. Mark's book makes cooking a delicious meal easy and accessible.
Additionally, the recipes use common ingredients--and a limited number of ingredients per recipe. For example, Chicken Curry in a Hurry calls for 4 ingredients: vidalia onions, curry powder, chicken breasts, and sour cream (excluding cooking oil, salt, and pepper: too ubiquitous to be considered ingredients). Egg Drop Soup calls for 5 ingredients: chicken stock/broth, eggs, soy sauce, sesame oil, and scallions.
I recommend this book both to novice and experienced cooks that are looking for a go-to cookbook with reliable recipes.

The 30-Minute Vegan: Over 175 Quick, Delicious, and Healthy Recipes for Everyday Cooking Review

The 30-Minute Vegan: Over 175 Quick, Delicious, and Healthy Recipes for Everyday Cooking
Average Reviews:

(More customer reviews)
As soon as I heard the title, The 30 Minute Vegan, I fell in love with this book. As with any great page-turner, I settled into a comfy chair and read through it from cover to cover. Every recipe beckoned to me, and just reading through the ingredients, I knew that these were going to be some very impressive dishes. Discovering a book filled with 175 mouth-watering recipes that could be made in 30 minutes or less was like a dream come true. If I could prepare great-tasting, satisfying, hearty vegan meals in much less time than I was accustomed to spending in the kitchen, then The 30 Minute Vegan would be a godsend.
But where to begin? Because I happened to have some nice, juicy ripe mangos on hand, I started with the Live Mango Gazpacho Soup. While most gourmet raw food dishes are time consuming (all that soaking, chopping, dehydrating, etc.), and high in fat from nuts, seeds, and avocado, this delightful little soup turned out to be a wonderful surprise! It's actually simple to prepare and made for a sensational low-fat summertime dish. As I have a garden full of mint, I substituted it for the cilantro called for in the recipe, and it blended quite nicely with the lime juice and mangoes. That's one of the things I love about The 30 Minute Vegan: Unlike most other cookbooks, the way the recipes are presented, you are actually encouraged and inspired to add your own culinary creativity. I love that feeling of freedom. I wasn't afraid to experiment on the first go-round with any recipe. The authors made me feel like I couldn't mess it up.
The Monk Bowl's, "Zen simplicity," as it is described in the book, is also co-author Mark Reinfeld's favorite meal to prepare. So I couldn't resist trying such an enlightened and inspired recipe. It's made with quinoa, which is noted for containing more high-quality protein than any other grain. I love it's lighter-than-brown-rice consistency, although this dish would be wonderful with any kind of rice, too. I chose to use roasted tempeh instead of tofu, (one of the suggested variations on this recipe), and added sliced red bell pepper and edamame to the mix of broccoli, carrots, and cauliflower. Served with nutritional yeast, soy sauce, flax seed oil, and a sprinkling of toasted sesame seeds, the lightly-steamed veggies and fluffy quinoa made for a hearty and satisfying meal. I think that the next time I make this dish, I'll try it with the peanut sauce suggested as another variation of this recipe.
I was thrilled to see that a simplified version of the prize-winning recipe from last year's Most Remarkable Vegan Recipe Contest was thoughtfully included in The 30 Minute Vegan. Live Un-Stir-Fry with Cauliflower Rice was as fun to prepare as it was vibrantly eye-appealing and palate-pleasing. The cauliflower "rice" really fooled my taste buds, and the spicy vegetable dressing had just the right balance of sweetness and piquancy.
Extremely helpful sidebars are peppered throughout the book: "Quicker and Easier," "Tips and Tricks," "Superfoods for Health," and "If You Have More Time" enhance the value of this book a thousandfold. As do the opening chapters, "Getting Started" and "Preparation Basics," which includes grain and dried bean cooking charts. It's wonderfully time-saving to have all of this information in one place.
Since I feel the need to get my hands on a copy of every vegan cookbook that comes along, I have a stack of them collecting dust on my bookshelf. But like the authors' earlier books, Vegan World Fusion Cuisine and The Complete Idiot's Guide to Eating Raw, The 30 Minute Vegan has found a permanent home in my kitchen, where its pages will quickly become worn, torn, and stained. And I haven't even begun to scratch the surface of this book. Can you say Chocolate Ganache Pie?
