The Williams-Sonoma Collection: Fish Review

I took the Williams-Sonoma "Fish" cookbook out from my local library and was fairly impressed with it. I have a number of seafood cookbooks in my personal collection, but there are several things I really like about this book. First off, though the book is not large, it covers all the essential seafood recipes, such as gravlax, bouillabaisse, chowder, paella, crabcakes, boiled lobster, fish and chips, sole in lemon-butter sauce, etc. Rest assured, the book contains at least one good recipe for every major type of fish or shellfish, so it is a good basic reference to have. Every recipe features a photo of the completed dish on the opposite page, often featuring a very nice presentation. Most importantly, and something that is lacking in far too many cookbooks: the recipes are laid out on the page in a very clear and organized fashion. A list of the ingredients is on the left, the recipe instructions are in the middle, and a small photo with notes is on the right. There are also helpful hints and serving tips at the bottom of the page. This makes it very easy to size up the recipes and take them on. Also included at the back of the book are tips on selecting and cleaning fish, advice on different cooking methods, and a glossary covering attributes of different fish species. Whether you're a beginner cook or an experienced amateur such as myself, this book will improve your knowledge and technique of fish cookery.

Williams-Sonoma Collection: Sauce Review

I have a friend who is a professional chef, and a good one. One night we were discussing steaks, and he said that anyone can "do" a steak, but it is the exceptional cook who knows how to make the meal memorable with the right sauce. I believed him then and do so now: the right sauce makes a good meal memorable. However, my early explorations led me to recipes that were complex and time consuming, and thus frustrating
Then I came upon this little gem while searching the amazon.com roster. The title is a bit misleading, because the book provides suggested entrees (and desserts) for each sauce recipe. For example, the recipe for duxelles sauce has it accompanying veal chops, and the recipe for carmel sauce accompanies the recipe for carmel swirl ice cream.
Nontheless, the sauce recipes are clearly written and easy to prepare. The results so far have been exceptional.
So, if you want to kick your cooking up a notch, try this book. No disappointments so far.

This is the book that got me interested in cooking. The chicken satay was great. I've improvised on some of the recipies that I thought were too involved, or when I couldn't find the ingredients. For the life of me I can't find tamarind concentrate anywhere!

James Beard's & Hors D'oeuvre And Canapes (James Beard Library of Great American Cooking, 1) Review

I actually inherited this cookbook. Found it in my mom's bookcase She said it was my Dad's. She said he liked to entertain. It's the 1960's printing. It has a lot of cool old ways of preparing food. There's strange aspics and spreads. There's an interesting beef tartar appetizer. The beef tongue appetizers are something you don't see too much these days. There's basic drink recipes. It definitely has a vibe of old school cocktail parties with Bossa Nova playing in the background and the guests knocking back martinis. What's really cool is how Beard's personality comes through. He's hilarious with his criticism and kudos, like on the drink recipe for, I think, the Tom Collins he says he garnishes the drink with a single cherry rather than the 'fruit cocktail', meaning the skewers of fruit etc. that were starting become common back then. Grab this one if you like quirky old school eats.
