The Paris Cookbook Review

The Paris Cookbook

The recipes contained in this book are numerous and diverse. However, unless one is experienced in French cuisine, it may be difficult to achieve the exact same end result as one who has experience, such as the author. The recipes are certainly original and authentic.
As dedicated chefs will know, one cannot rush in the preparation of these recipes and the downside, for most of us who are career people, is finding the time and energy to prepare most of the recipes contained here. They are by no means ones you can whip up in thirty minutes or less. Some take the best part of the day to prepare so perhaps these recipes are best set aside for special occasions, week-ends or for some event where time is not a factor. "The Paris Cookbook" will make a great addition to any library. Most of the recipes tried to date are excellent such as the Bonaparte's Chicken Salad and the Zucchini and Curry Soup; however, you might want to pass by the White Bean Soup - it left a lot to be desired and had the same appeal as wallpaper paste! Oh, well, we cannot expect every recipe to be perfect.

Jacques Pepin More Fast Food My Way Review

Jacques Pepin More Fast Food My Way

One typically encounters a diminution of quality in "follow-up" cookbooks, but that's not at all true in this instance. I'm convinced at this point that Jacques Pépin could cook an appetizing groundhog if he set his mind to do so.
Perhaps the most important facet of this cookbook is that it's a companion volume to Jacques' terrific PBS Cooking Show. The DVDs are available too: Jacques Pepin: More Fast Food My Way. While the video is both fascinating and entertaining, it's really not essential to carrying out the details of these superb recipes. The directions in the cookbook are plenty clear.
While this work is not really a foundational or general cookbook, the dishes herein will help you pull off supper when you're stumped. The book is also invaluable for those who entertain as there are some really magnificent appetizers and desserts in here.
In summary, I highly recommend this one, as I do Jacques' earlier companion volume: Fast Food My Way.

Mad About Macarons: Make Macarons Like the French Review

Mad About Macarons: Make Macarons Like the French

I've made at least 15 batches macarons from various recipes and none would turn out correctly. Once I tried Jill Colonna's method of just mix the hell out of the batter and then fold it towards the end to achieve the right consistency - my macarons came out perfect. I've made 8 batches of macarons using this method with great success each time. I won't be going back to the gently folding the batter until it looks like molten lava method. The flavor combinattions are great. There's a section just for chocolate! What I liked best is that at the end of the book Jill gives you an egg equivalent chart for any amount of leftover egg whites you have. This is a great resource. Her macarons are not as sweet as the other recipes also.
I highly recommend this book for anyone is starting to make macarons. It takes the frustration out of trying to make macarons. No more flubbed shells with this method!
