Flavors of Burma: Myanmar : Cuisine and Culture from the Land of Golden Pagodas Review

Great book. Great recipes. My wife and I cooked the double fish curry last night. Its great. The recipe was easy to follow and quick to cook. We already had everything needed - although we used red fish fillets instead of the mackerel or king fish suggested. It tasted really good - smooth and tasty but without that "after curry burp" you get with some of the traditional Indian curries. It looked really good when cooked too - its nice to cook something without knowing in advance how it should look like after the experts have cooked it!
We will definitly give the other recipes a go too.
The information on Burmese (Myanmar?) life is interesting too - obviously written with some compassion.

Burma, also called Myanmar, is located in Southeastern Asia between Bangladesh and Thailand, bordering the Andaman Sea and the Bay of Bengal. Typical meals include rice, curries, salads, vegetables, and side dishes such as cucumber and tomato slices eaten with traditional Burmese fish sauce (Nga-Pi-Yae ) and Fried Shrimp with Shrimp Paste (Balachung), which are presented here in 76 enticing recipes.
Susan Chan depicts the culture and traditions of Burma, providing ample information on the Burmese market, commonly used ingredients, and eating and serving customs, explaining, for example, that Burmese eat with their fingertips. She also familiarizes her readers with the language, festivals, and principal cities of this country. Complete with b/w illustrations and photographs.

Sauces: Classical and Contemporary Sauce Making Review

Sauces: Classical and Contemporary Sauce Making

This tome on sauce making is easily the most thorough coverage I have ever been exposed to. Well, it's the only one I've been exposed to, and I doubt there is anything as complete as this.
Readable, in-depth, expansive, edifying, and complete.
This is a book that needs to be studied and intellectually digested over a period of time as if one were attending college to become a world class chef. This is professional material and should be treated accordingly.
A prized gift for the professional, the potential professional, and the (really) serious home cook.
That being said, if you want to just whip up a quick sauce in the pan, I'm not sure this will serve your needs. There are dozens of sauce recipes, and they're good, but the idea behind the book is to teach you how to use a particular technique, then apply your knowledge in your own unique way. This is a "get a PHD in sauces", not a whip-it-up-quick index card recipe book.
Twenty muscular chapters include:
1. A Short History of Sauce Making
2. Equipment
3. Ingredients
4. Stocks, Glaces, and Essences
5. Liaisons: An Overview
6. White Sauces for Meat and Vegetables
7. Brown Sauces
8. Stock-Based and Non-Integral Fish Sauces
9. Integral Meat Sauces
10. Integral Fish and Shellfish Sauces
11. Crustacean Sauces
12. Jellies and Chauds-Froids
13. Hot Emulsified Egg Yolk Sauces
14. Mayonnaise-Based Sauces
15. Butter Sauces
16. Salad Sauces, Vinaigrettes, and Relishes
17. Pruees and Puree-Thickened Sauces
18. Pasta Sauces
19. Asian Sauces
20. Dessert Sauces
A superb instructional manual that will make you an expert if you study and apply some effort. It gets my highest rating and reccommendation for anyone who craves praise for their cooking prowess (like me).

The Cook's Book of Intense Flavors: 101 Surprising Flavor Combinations and Extraordinary Recipes That Excite Your Palate and Pleasure Your Senses

A stimulus for the adventurous cook, Robert & Molly Krause's Cook's Book of Intense Flavors is almost guaranteed to take your taste buds somewhere they've never been before. Even the not so adventurous will probably be invigorated by the book's uncommon spirit of bold culinary fun.
The book and its tempting photos are beautifully put together but the structure is unusual. Upfront, each recipe is identified only as a trio of flavor combinations, many of which at first glance look pretty improbable. When you reach the actual recipe, you find a rationale for the mix of tastes and a clear and simple application along with suggested menus and encouragement for further experimentation. Plus, there are two indexes in the back to find recipes by ingredient or by the title of the dish. One of the seven sections deals with more complex and time consuming creations, but most of the book should boost the enjoyment and creativity of the home cook.
My copy arrived when I had an abundance of peaches on hand and in no time I was trying out the flavor combination "peach + ginger + vinegar" and the recipe which produces "provocative peaches." This turned out to be an easily prepared and surprisingly delicious sweet & sour peach pickle with multiple uses and variations. I am very happy to have Intense Flavors sitting on the top of a pile of my cookbooks - there are a batch of ideas that I am anxious to put to use and dozens of exciting recipes I've marked to try right away that are bound to broaden my taste horizons.
