Asian Fusion Review

It's not only in the US that ingredients are hard to obtain. Granted all the Asian varieties can be found in Asia but let's be real... where can one find pigeon to cook? From the window sill? The last time I saw morel mushrooms were at Dean and Deluca in NYC's Soho, and ok, maybe this French restaurant in Kuala Lumpur called Frangipani. Not a very practical book for the home kitchen, unless you're trying to impress someone by bending backwards to get the ingredients. It is nonetheless a book of culinary artistry. Beautiful photography with daring concepts. Brugger has an impressive resume, and his creations are quite audacious. He does try (a little too hard I think) and should be commended for just trying, although these days I wonder why people bother with fusion when Asian food is best eaten on it's native plate. I don't think I'd enjoy mixing a feta and olive greek salad and chinese winter melon soup with red dates for starters, indian curry and sushi for main course, and coffee cheesecake topped with red bean paste for dessert without feeling like I want to puke.

The Chinese Chicken Cookbook: 100 Easy-to-Prepare, Authentic Recipes for the American Table Review

The Chinese Chicken Cookbook: 100 Easy-to-Prepare, Authentic Recipes for the American Table

Many of the recipes require a dutch oven and a boning knife (for meat from the chicken leg). There are over 100 recipes including stir fry dishes with melons.
I am particularly happy to find recipes for steamed chicken buns including the bun dough recipe and street dumplings that "were created by refugees from Shanghai who fled their city in the 1950s revolution and came to Hong Kong. They would set up portable charcoal or coal stoves in the streets and make these dumplings for people to lunch on. Later, many of these entrepreneurs went on to open restaurants."I am collecting all of the author's titles as much for her old fashioned style as for her recipes. She makes me want to make my own pasta. In my opinion, acquiring all of the author's cookbooks first before buying the other English language Chinese cookbooks makes an important foundation to understanding what you eat in America and how the food is cooked at home. Then proceed to the other cookbooks and hopefully to eating the more elaborate levels of Chinese cooking. I didn't pick up the author's cookbooks until very recently and only after learning that the author is from Sun Tak. I wish I had bought her books long ago.

I purchased the softcover version at Costco a few weeks ago for around six dollars- money well spent! Each recipe is accompanied by a photo and nutrition information is listed at the bottom of the page. The recipes are easy to follow. Many have substitution information, since some items are unusual or difficult to find.
The book is divided into sections by course- soups, appetizers, shellfish, fish, poultry, meat, veg. main dishes, rice-noodles-lentils, veg. side dishes, salads, relishes-chutneys, breads, desserts-drinks. The photos are attractive, recipes are widely varied and appealing, and the nutrition information is a major plus.
I have no complaints at all about this book- it inspires me to learn to cook new foods and to try new techniques, and experiment with unfamiliar ingredients.
(Mexico, South America & Caribbean cookbook from this series also purchased. It is also a terrific find.)*** NOTE ***
Some of the dessert recipes are far to sweet for me. I have been experimenting with using less sugar, sometimes as little as half. The result is a much more palatable end product.

Patricia did a really good job in creating this cookbook with not just beautiful images but also the recipes are taste-proof (meaning that the dishes in this book has been cooked and for sure been worth the word - yummy!!! to be placed in the book!) This is indeed a great find as there is a lot of recipes and I know some of you out there prefer images, however this book is going to cook your way into your stomach. Do not be afraid to get one as this is on my top favorite cookbooks to choose from when cooking for friends!
Most of the dishes in here has been a long-time favorite, and I am licking my lips just typing about the it... heehee
A book not only has history of flavor, but also a mixed of wonderful imagination of taste!

Asian grandmothers - whether of Chinese, Japanese, Indonesian, Vietnamese, or Indian descent - are the keepers of the cultural, and culinary, flame. Their mastery of delicious home-cooked dishes and comfort food makes them the ideal source for this cookbook. Author Pat Tanumihardja has assembled 130 tantalizing dishes from real Chinese fried rice to the classic Filipino Chicken Adobo to the ultimate Japanese comfort dish Oyako donburi. This is hearty food, brightly flavored, equally good to look at and eat. Flavors range from soy and ginger to hot chiles, fragrant curries, and tart vinegars. The author has translated all of the recipes to work in modern home kitchens. Many of them have been handed down from mother to daughter for generations without written recipes, and some appear in tested and written form for the first time. An exhaustive Asian Pantry glossary explains the ingredients, from the many kinds of rice and curries to unfamiliar but flavorful vegetables.

The Complete Asian Cookbook Review

I have owned and loved this cookbook for 20 years. It is a MUST for anyone who wishes to become conversant in Asian food. I have lived in Indonesia for 7 years and traveled extensively in the region, and find her recipes to always be authentic. My one complaint is that a few years ago the book was republished with "revised" in big letters on the front, and I bought a second copy thinking it would be updated inside. In fact, it is absolutely criminal that they refer to it as "revised." IF YOU OWN AN OLDER VERSION OF THIS BOOK DO NOT BUY A NEW ONE. Virtually the only noticeable difference is that the photos are smaller and the list of where to buy ingredients is replaced by a forward saying that ingredients are now more readily available and food processors are useful (duh). Although she mentions changes to one recipe, Singaporean laksa, I have not seen a single change to the rest of book - including corrections of the rare typo or mistake, or instructions for a food processor where it clearly would make sense. Solomon and the publisher should be ashamed that they called the new edition "revised" and thereby caused loyal fans like me to waste money on a new book.
